Located in northwestern Spain, Castilla y León is a community with a great cheese making tradition. The region consists predominantly of a high plateau ringed by mountains where the sheep graze on aromatic plants like lavendar, thyme, rosemary, sage, mint and oregano – all of which impart flavor to the milk.

Today the Castilla y León region is the leading producer of sheep’s milk in Spain, with 61% of total production and these cheeses have received an IGP seal (protected geographical indication) which ensures that origin, process and quality requirements are followed.
